Fish Croquettes

These Fish Croquettes are inspired by a Portuguese dish called Bolinho de bacalhau​. A 40 - Minute recipe made with easily accessible ingredients.

Fish Croquettes
The inspiration for this recipe comes from our trip to Portugal a couple of years ago. Their famous Bolinhos de Bacalhau are made with cod, which is not easily accessible here in Slovenia. Instead, we created these fish croquettes using canned sardines and mackerel. You can easily substitute with cod or use only sardines or mackerel, but we really enjoy this combination that we always keep in our pantry. We typically serve these croquettes as a main dish, accompanied by a light side, such as a seasonal salad, and a delicious sauce, which you can find in the blog post linked below.

Storing and freezing

These Fish Croquettes can be stored in two ways.

When the dish is ready, leave the croquettes to cool. Then, transfer them to an airtight container, seal it, and place it in the fridge for up to 3 days.

You can also freeze the Fish Croquettes. Transfer them to a freezer bag or an airtight container when they cool. Seal tightly and place in the freezer for up to a month. Before serving, defrost the dish, then reheat it in the pan.

METHOD

  • potato

    Peel the potatoes and cut them into cubes. Add the potatoes to a large pot and cover with water. Place over high heat and bring to a boil. Lower the heat, cover with a lid, and cook for 20 minutes or until the potatoes are cooked.

    Drain the canned fish and add to a small bowl. Using a fork, crush the fish and set aside.

  • Croquettes mixture

    When the potato is cooked, drain and mash into a puree in a large bowl. Add the canned fish, diced onion, chopped parsley, grated lemon zest, salt, and pepper. Knead into a smooth mixture. Add the eggs and stir well using a spatula.

  • Fish Croquettes

    Pour the oil into a large pan. Place over high heat and cook until 180 °C / 350 °F. Using two tablespoons, shape the mixture into Croquettes and gently dip in hot oil. Make sure there's enough space between them to fry and move around. Fry for 4 - 5 minutes, turning occasionally while frying. When they are golden brown and crunchy, transfer them to a paper towel to drain off any excess fat.
